Meet The Chef

Lauren Fuchs

Hi, y'all! I'm Lauren Fuchs, the Head Pastry Chef at Palmetto Baking Co. My story begins in a small town in Mississippi, where my family raised me around southern cooking, baking, and a love for travel and new experiences. My adventurous spirit inspired me to leave my small town and attend Le Cordon Bleu College of Culinary Arts in Orlando, where I graduated with a certification in Patisserie and Baking Arts in 2012.

I started my career as an entry-level Baker for the Peabody Hotel in Little Rock, AR. The hotel was eventually sold and rebranded as a Marriott, and I was swiftly promoted to Assistant Pastry Chef and shortly after, to Executive Pastry Chef. Driven by a passion to elevate my craft, in 2016 I moved to Las Vegas and took on a position as the Executive Pastry and Design Chef for an award-winning bakery.  But that wasn't it, two years later, I accepted a seat in the fast-paced Hospitality & Gaming industry working for world-renowned celebrity Chef Wolfgang Puck.

ONCE A DREAM, NOW A REALITY.

All along though, my dream was to own and operate my own baking company and in 2020, a year of uncertainty, I took the plunge and opened Palmetto Baking Co. I hope that my baked creations will bring the same warmth and comfort that my grandma's desserts brought me as a child and that with each slice we share the "Sweet, Simple, Southern" life!
